I’m getting a noticeable delay. It used to only happen when I opened something old I rarely accessed, but now it happens in most Gnome apps. They are fast once they load. I don’t know if there is something happening with encryption or compression, or if it is my drive’s wear. I’m not really sure how to diagnose this one in a meaningful way. On Workstation 42 mostly defaults and from an upgrade path since 36 on this machine IIRC.
I haven’t experienced anything weird when I used the old MacBook with Fedora 42 today.

Is it with every app?
It appears to only happen with Gnome native stuff compared to what I experienced in the past. Everything else I load is either flatpak stuff like FreeCAD or compiled and scripted stuff I launch from the command line. If I open the calculator or nautilus it takes somewhere around 1.5-2 whole seconds before it opens. It is enough of a pause to return from the dock view and wonder if I actually clicked on the thing before it pops up.
It could be an issue with dbus not starting properly. Check to see if dbus access is timing out.
