It's street food time again! And this time it's another of my favourites. In the past you've seen me show 肉夹馍 (ròujiāmó) which is my favourite Chinese street food. It is my favourite, however, by a very slender margin because today's essay will introduce you a very close second. This is 锅盔 (guōkuī, literally “pot helmet”), a crispy, stuffed flatbread that looks like a little bread helmet (hence the name). It's a very popular street food all around China, and though its source is 陕西 (Shaanxi), local variations are everywhere. This is the Hubei variant (obviously).
